Mexican Street Corn-Inspired Dip
Serious Mexican Street Corn-Inspired Dip
Creamy, cheesy, a little spicy, and loaded with serious flavor.
Ingredients:
• 5 ears fresh corn, kernels removed, or about 2 cans corn, drained
• 1/4 medium red onion, diced
• 2–3 jalapeños, diced, depending on heat preference
• 4 oz cotija cheese, divided
• 1/2 cup mayo
• 1/2 cup softened cream cheese
• 2 tbsp Serious Seasonings Taco Seasoning
• 1 tbsp oil
Easy Crema:
• 1 cup sour cream
• 1 cup heavy cream
• Juice of 1 lime
Cilantro Lime Sauce:
• 1 cup mayo
• 1 cup sour cream
• 1/2 bunch cilantro
• 1 tbsp Serious Seasonings Taco Seasoning
• 1 tbsp Serious Seasonings Hot Honey Seasoning
• 1/4 cup water, start with half and add more as needed
Directions:
1. Heat a cast iron pan over medium heat with 1 tbsp oil.
2. Add the corn and roast until some color develops, about 5 minutes.
3. Add the jalapeño and red onion, then cook until slightly softened
4. Reduce the heat to low and stir in the mayo, softened cream cheese, half of the cotija, and Serious Seasonings Taco Seasoning until creamy and combined.
5. For the easy crema, mix sour cream, heavy cream, and lime juice in a bowl. Set aside.
6. For the cilantro lime sauce, blend mayo, sour cream, cilantro, Taco Seasoning, Hot Honey Seasoning, and water until smooth. Add more water if needed to thin it out.
7. Remove the dip from heat, then drizzle with crema and cilantro lime sauce.
8. Top with remaining cotija and cilantro.
9. Serve with tortilla chips or as a side on its own!
